The Oven That Started It All
One hundred years ago, ovens were extremely primitive, but thanks to the vision and technical expertise of Albert Dupuy, who was inspired to create an oven that “roasted without drying out food,” the now-famed La Cornue line was born.
The La Cornue oven’s signature was its vaulted shape and side chambers that created a natural airflow. In effect, Albert created the first convection oven.
Advertisements for La Cornue in the early 1900s extolled the benefits of cooking in the oven, no turning or basting, retention of moisture, incredible texture and amazing succulent results. We continue to use the same terms today to explain the rewarding experience of cooking on this remarkable range.
